Do you need a recipe that the whole family will enjoy? When trying to feed various preferences around one table the concept of “build-your-own” can be fantastic! Let everyone decide what they want and be sure to offer lots of plant-based and colorful options to choose from.
As an Oregonian, you may be a fan of Café Yumm. Yumm Bowls are a perfect “build-your-own” concept.
This is my copycat version of Yumm sauce that I have renamed “Everything Sauce” because I think it goes well on, everything.
Enjoy this classic combination of Yumm bowl essentials or get creative and use your favorite grain, bean, and veggies. Just don’t forget the sauce!
1/2 cup sliced almonds
1/3 cup nutritional yeast
3/4 cup garbanzo beans, drained
1/2 cup water, more as needed
1/4 cup lemon juice (~2-3 lemons juiced)
2 garlic cloves
1/2 teaspoon salt
Optional: 1 teaspoon curry powder
2 cups brown rice
2 15 oz cans black beans, drained and rinsed
2 tomatoes, seeded and diced
1 small can sliced black olives, drained
1/4 cabbage, shredded
1 carrot, shredded
1 Store-bought salsa
1 avocados, sliced
Set up rice to cook, so it is ready when you are.
Make the sauce by blending all ingredients in a blender or food processor. Puree until smooth. Add more water as needed to achieve desired consistency. It will thicken a bit once refrigerated.
Layer in bowls, rice, beans, Everything Sauce, cabbage, tomatoes, olives, salsa, and avocado.
Or feel free to use any other veggies or herbs you have available to create the bowl you desire using this sauce and salsa for toppings.
