Emily Forbes Interview in Wilsonville

Q: What made you want to focus on nutrition?

I love food! From a young age, I enjoyed many types of food and cuisines from around the globe and grew to enjoy cooking. Nutrition felt somewhat ho-hum to me until I was introduced to whole food nutrition, which makes way more sense than a food pyramid and reducing nutrition to individual supplements. I personally made a major transition in diet and found I was enjoying food more than I ever had while feeling fantastic! This lit a flame in me to share my knowledge and passion with others.

Q: Do you follow a particular “diet”, or are there particular diets or ways of eating that you prefer?

I’m a HUGE advocate for eating more whole foods with a heavy emphasis on plants. I’ve personally found eating a completely plant-based diet works really well for me. I work with my clients to increase the plants on their plates. All of the quality nutrition science points to plants providing the most bang for each bite. Anytime you move toward more whole foods and consume less processed foods your body will thank you. From there working to increase plant foods is great. I have found it very beneficial to work individually with clients to help them find a routine that works.

Q: What services do you provide, and/or how do you help your clients?

To help people increase their intake of plant-based foods I developed the Plantiful Plate meal plan subscription. This service provides 3 whole food plant-based recipes + 1 easy-to-use shopping list every week. It also includes weekly bonus recipes and a direct life-line to me through our members-only Facebook group. This service is great if you are struggling with nutrition, having difficulty finding recipes you know are healthy and delicious, or are just too tired to figure it out on your own. You can learn more here. I also work 1-1 with clients who have specific health goals. After completing a thorough assessment, ideally looking at recent bloodwork, we can get to the root of your health issues. We meet virtually, I educate and hold you accountable and our work is very tailored for your individual circumstances. If you do not feel as well as you want to and other health professionals have told you “you’re fine” or “everything looks normal” I would love to talk about how my approach is different. I believe you know your body better than anyone. If you want to feel better you should follow that instinct until you find someone who will help you get there. If you would like to see if I am a good fit for you, email me

Q: Who does your clientele usually consist of?

I usually work with women, as I have found they are more willing to admit they need help and seek assistance. I am happy to work with anyone who wants to improve their health.

Top concerns my clients come to me for help with include:

  • Lack of energy
  • Type 2 diabetes
  • Cardiovascular issues (such as cardiovascular disease, high cholesterol, and high blood pressure)
  • Autoimmune diseases
  • Fibromyalgia
  • Tailored support in transitioning to a plant-based diet

One of my favorite things to help people regain is their energy. I see that most people live in a constant state of fatigue. With the proper combination of diet, lifestyle, and when necessary, supplements, I have seen people come alive.

If I do not believe I’m the right fit for your goals, I have some wonderful colleagues I am happy to refer you to.

Q: What is your favorite recipe?

Asking a chef their favorite recipe doesn’t feel like a fair question. 🙂 I love using seasonal produce and get very excited when I see new crops coming into season. I’m a fan of homey bowls. I love soup. I’m a connoisseur of foods from across Asia and Latin America. I know this doesn’t help narrow things down so keep your eyes peeled for some of my favorite recipes shared with the blog in the coming months.

Q: What are some common myths about nutrition that you would like to clear up?

I could go on and on with this question, but I’ll save something for the future. One thing I would love to see is our society shifting to food in its whole form. Nutrition science, and science in general, reduces everything down to single things, like single nutrients. But that is not how it works in our body. That is why taking a single vitamin in the form of a pill (or gummy, or chewable) is not going to be metabolized in the same way our body will absorb and use vitamins found naturally in whole foods. Whole foods never contain a single nutrient. They are rich with nutrients that work symbiotically the way nature and God intended them. And some nutrients, taken singly, can actually be detrimental, not to mention many supplements are of very poor quality, so I always advise having the support of a nutrition professional to make decisions on supplements to take. In general, most people should be able to attain a wonderful array of the nutrients they need from whole foods (with an emphasis on plants).

Q: What would be your top tips for weight loss?

What matters most to me is that you feel great and you are not at risk for disease and you do not have a disease. There are plenty of unhealthy people in smaller bodies and there are people in larger bodies who feel great. However, I do understand some people may be carrying weight that is, in part, preventing them from feeling their best.

  • Maintain a stable diet. Yo-yo dieting, where you jump from one diet to another to another, is not good for your body or your metabolism and can cause your body to hang on to excess weight for dear life.
  • Review your blood work to help identify the root cause of excess weight. Once the root cause(s) are addressed it allows your body to get to a weight it feels comfortable and healthy.

You can sign up for Plantiful Plate to ensure you are eating a stable and healthy diet or you can contact me to schedule a blood work review session and we can see if my findings point to some root causes that we could address together.

Q: If you could recommend ONE major change for people to focus on in relation to nutrition, what would it be and why?

EAT THE RAINBOW with plants! The majority of your plate should be plants and, by varying the colors, you are eating a variety of nutrients. Although this sounds simple, most people aren’t doing it. If eating a rainbow of plants seems like more of a challenge then you’re up for alone, let me help. I created the Plantiful Plate meal plan, so you have the recipes and support you need weekly. And when the colorful plant-based foods taste good you’re a lot more likely to eat them! Rather than designing your meals around a meat, add the meat as the condiment. And when you look at the meals you are cooking ask yourself how you can add more colors. If this is all you do I guarantee you will be making positive nutritional changes. I love helping people practice skills that make eating nutritious meals a routine part of life.

Q: What is one of your favorite quotes on nutrition / healthy eating.
I love the invented quote…

“I regret eating healthy” – Said no one ever

I don’t encourage living in regret, but really have you ever had a super nutritious meal and thought, gosh I wish I had the deep-fried highly processed meal instead? Food for thought!
